Simple Herbal Broth (Meat based)

Ingredients:

1 packet of LunaLei Wellness herbs

1 onion with skins

3 cups Chicken bones (necks, backs, feet, etc.) or beef bones

1 tbsp. Black peppercorns

3 Carrots

4 quarts of water

3 Celery stalks

1/4 cup Apple Cider Vinegar

Directions: Add all of the above ingredients to a crockpot or stove-top pot, cook on high until it boils, then simmer on low 6-12 hours (if using beef bones, 12-24 hours). Strain. This should produce about 3 quarts of broth. Refrigerate and use within one week, or store in the freezer for future use.

Vegetarian Herbal Broth

Fill a crockpot with onions, carrots, celery, potatoes, mushrooms,and kombu then add LunaLei herbal packet, fill to the brim with water, and cook on low for 6-12 hours.

Herbal Congee

Ingredients:

1 cup uncooked rice (pro tip: optionally you can freeze your uncooked grains for a smoother congee)

1 ( I inch ) knob of Ginger

8 cups of Lunalei herb packet infused broth or water

Salt/pepper to taste when serving

Toppings of choice: (eggs, soy sauce, green onion, hot sauce, seaweed, cooked veggies)

Directions:

1. Wash your rice until water runs clear

2. Place water and rice into pot bring to a boil. Add ginger

3. Once congree boils, reduce heat to bring to a simmer. Simmer uncovered and stir occasionally. The rice can stick to the pan so be sure to stir and scrape

4. Congee is done when when it’s creamy and thick (varies between 30-60 minutes)

5. Serve with toppings and eat

Pho Broth

Broth Ingredients:

2 onions, halved

4" nub of ginger, halved lengthwise

5-6 lb good beef bones, preferably leg and knuckle

1 lb beef - chuck, brisket, or rump, cut into large slices (optional). Omit if using the crock pot variation.

1 package of LunaLei Wellness "Pho Real!" Spices

1 1/2 tablespoon sea salt

1/4 cup fish sauce (optional)

1 tablespoon sugar (optional)

Noodles & Meat:

1 lb rice noodles (dried)

1/2 lb flank/london broil, sirloin or eye of round

Garnishes:

2 limes, cut into wedges

2-3 chili peppers, sliced

2 big handfuls of fresh bean sprouts

Hoisin sauce to taste

Sriracha hot sauce to taste. Fresh mint, cilantro, and basil, are also traditional accompaniments.

Directions:

CHAR GINGER AND ONIONS: (Optional, but really gives the ginger and onion a deep, sweet, mellow flavor). Turn your broiler on high. Place ginger and onions on baking sheet. Brush a bit of cooking oil on cut side. Broil until they begin to char, turn to char other side. Should take 10-15 min. Or add a bit of oil to a frying pan and lightly brown ginger and onion.

PARBOIL THE BONES: (Optional, but gives a clearer broth.) Fill pot (12-qt capacity) with cool water. Boil water, add bones. Boil vigorously for 10 min. Drain, rinse bones and pot. Refill pot with 6 qts cool water and bones. Bring to boil, then simmer. Remove any scum that rises to the top.

TOAST SPICES (OPTIONAL): Place LunaLei Wellness "Pho Real" spices in skillet and toast over medium high heat until fragrant, 2-3 min. Move spices to plate to cool; set aside.

BOIL BROTH: Add ginger, onion, LunaLei spices, 1 lb beef, sugar (optional), fish sauce (optional), salt to bones and simmer for 1.5 hours. Remove meat (not bones) set aside (you'll be adding this back in latter). Continue simmering another 1.5 hours. Strain and return to pot.

TASTE BROTH - CRUCIAL STEP. If broth's flavor doesn't shine yet, add 2 tsp more fish sauce, a large pinch of salt and a smallnugget of rock sugar (or 1 tsp regular sugar). Keep doing this until the broth tastes perfect. Bring broth back to boil and serve broth with noodles, meat and toppings.
